Chicken Fajitas

Ingredients: 

 

For the fajitas

3 small chicken breasts, cut into strips

2 teaspoons dried oregano

a good pinch of chilli powder, or to taste

1 teaspoon ground cumin

1 onion, sliced thinly

2 red peppers, sliced thinly

3 tablespoons olive oil

4 flatbreads of your choice, or some soft tortilla

salt and freshly ground black pepper

 

For the salsa

1 Romano pepper, deseeded

1 green Serrano chilli, deseeded

2 tomatoes, deseeded

1 shallot

2–3 cloves of garlic

a few leaves of fresh basil

a squeeze of lime juice

a dash of olive oil

salt and freshly ground black pepper

Preparation: 
  1. The first step is to make the salsa.  Start by carefully chopping the pepper, tomatoes, shallot and garlic, adding them together in a bowl once ready.  You will also need to chop and add in the green chilli, but make sure you ask an adult to do this
  2. Rip in the basil leaves, add the lime juice and olive oil and season with salt and pepper. Stir together once again to make sure it’s all evenly mixed, give the salsa a quick taste for seasoning and then set aside whilst you prepare the fajitas
  3. Put the chicken, oregano, chilli powder, cumin, onion and peppers into a bowl with 2 tablespoons of the olive oil and mix well. Season with salt and pepper and set aside to marinate for as long as you can
  4. Heat the remaining tablespoon of olive oil in a sauté pan over a medium hob and add the chicken, onion and peppers. Cook until the onions have caught some colour, the peppers are soft and the chicken is cooked through – this should take about 7–10 minutes.  You may need to do this in 2 batches to make sure the chicken browns up nicely
  5. Serve in a flatbread or tortilla, with a bowl of the pepper and chilli salsa on the side

  1. Using a big pestle and mortar, gently grind the garlic to a paste.  Add in the avocado and grind again until it’s all mashed together
  2. Add in the lime juice, chopped spring onions and the chopped coriander.  If you want to give it some spice, stir in the chillies and the tomatoes.  To finish, season with salt and then it’s ready to add to your wraps
